I can’t even remember which site I stole this recipe off of, but it’s a good one. I make these when I’m trying to eat a bit healthier. (Cough cough, like at the end of Girl Scout cookie season cough cough.) They give you a tiny hit of dark chocolate to curb your sweet tooth, and are full of my favorite protein, peanut butter. Fuck eggs! No, not really. I love eggs actually. But it’s hard to beat peanut butter with a hint of chocolate. Plus they include rolled oats which are high in soluble fiber, and chia seeds which are rich in antioxidants, fiber, and omega-3 fatty acids. Lastly, if you use local honey, it’s supposed to keep your seasonal allergies at bay. (Local bees collect the pollen from local plants and many seasonal allergies are caused by these same plants, so eating honey that contains that pollen can possibly combat those allergies.)
Ingredients:
1 cup peanut butter or almond butter
1/3 cup melted coconut oil
1/3 cup raw honey (I use honey my Grandma Larren sends me. She has her own bees in Oklahoma and her honey is amazing.)
1 tsp. vanilla
2 to 3 cups raw oats (Quaker is just fine. And I usually do 3 cups)
1/4 cup chia seeds
1/4 cup chocolate chips – I use dark chocolate
First, mix all the wet ingredients together. Then add the dry ingredients and mix. Put the bowl in the fridge for about a half an hour or so to help chill the dough so the peanut buttery goodness doesn’t stick to your hands. Then, roll them into the shapes of balls, put them in an air-tight container, and you’re good to go. They keep for over a week in the fridge. Keep floss on hand though, because the only downside to chia seeds is they get stuck in your teeth like a mother fucker.
